Thai curry with rice

Ingredients (for 4 persons):

  • 350g jasmine rice (fragrant rice)
  • 500g meat* of your choice. Alternatively tofu, fish, shrimp or simply more vegetables*
  • 2 peppers
  • 2 spring onions
  • 1-2 carrots
  • 1 broccoli
  • 2-3 tablespoons red curry paste (if you like it milder, use yellow paste)
  • 800ml coconut milk
  • 3-4 tablespoons fish sauce
  • peanut oil for frying
  • salt, pepper to taste

For the rice, please follow the manufacturer’s cooking instructions!

Heat the wok and add peanut oil. Once the oil is hot, add the curry paste (the more curry paste, the more intense and spicier the curry will be) and stir it all together with a spatula or wooden spoon. Then add the meat. If no meat is being used, start with the vegetables or roasted food that takes the longest to cook. Add the other ingredients in order of cooking time (long to short) so that they get a taste of the roasted flavors and some of the curry paste. Add some salt (pepper optional) to the meat and vegetables. Then pour in the coconut milk and add a little fish sauce. Let it all simmer until the vegetables are cooked to your desired consistency. Season to taste with the fish sauce and, if desired, a little more curry paste. ENJOY.

*The vegetable and meat/fish selection can be varied as desired.
